4 large russet potatoes

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

4 tablespoons unsalted butter, melted

3 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

Salt and pepper to taste

1/4 cup sour cream for serving

Chopped fresh chives for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    Wash and scrub the potatoes thoroughly, then pat them dry with a towel.

      Place a potato on a cutting board between two wooden spoons or chopsticks (this will prevent slicing all the way through). Slice the potato thinly, about 1/8-inch apart, making sure not to cut through entirely. Repeat for the remaining potatoes.

        In a bowl, mix melted butter, minced garlic, fresh rosemary, thyme, salt, and pepper.

          Generously drizzle the garlic-herb butter mixture over the potatoes, making sure some seeps into the crevices.

            Line a baking sheet with parchment paper and place the potatoes on it. Bake in the preheated oven for 30 minutes.

              Remove the potatoes from the oven and sprinkle the shredded cheddar and grated Parmesan cheeses generously over each potato, allowing some to fall into the slices.

                Return the potatoes to the oven and bake for another 15-20 minutes, or until the cheese is melted and bubbly and the potatoes are crispy on the edges.

                  Once cooked, let the potatoes cool slightly, then serve hot with a dollop of sour cream and a sprinkle of fresh chives on top.
