1 cup fresh lemon juice (about 4-6 lemons)

1 cup granulated sugar

4 cups cold water

1 cup fresh raspberries (or frozen)

1 cup heavy whipping cream

1/2 teaspoon vanilla extract

Ice cubes

Lemon slices and mint leaves for garnish

Instructions
 

In a medium mixing bowl, combine the fresh lemon juice and granulated sugar. Stir until the sugar is fully dissolved.

    Add the cold water to the lemon-sugar mixture and stir well. Taste and adjust sweetness if desired. Set the lemonade aside.

      In a blender, combine the raspberries and a splash of the prepared lemonade. Blend until smooth. If using frozen raspberries, let them thaw slightly for easier blending.

        Strain the raspberry mixture through a fine mesh sieve to remove the seeds, collecting the smooth raspberry puree in a bowl. Set aside.

          In a separate bowl, whip the heavy cream with an electric mixer until soft peaks form. Add the vanilla extract and continue to beat until stiff peaks form.

            Gently fold in half of the raspberry puree into the whipped cream until it is lightly marbled. Reserve the remaining raspberry puree for serving.

              To serve, fill a glass halfway with ice cubes and pour in the lemonade. Top with a generous dollop of the whipped raspberry cream mixture.

                Drizzle with the remaining raspberry puree and garnish with a lemon slice and a few mint leaves.
