Prepare the Chicken: Season the chicken breasts with salt, pepper, paprika, thyme, and oregano on both sides.
Layer Ingredients: In the slow cooker, place the diced onion at the bottom. Lay the seasoned chicken breasts over the onions.
Add Rice and Liquid: Pour the uncooked rice over the chicken, then pour the chicken broth and add the minced garlic, lemon zest, and lemon juice evenly across the top.
Cook: Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and easily shreds.
Mix in Peas: About 30 minutes before the cooking time is up, stir in the frozen peas to heat through.
Shred Chicken: Once done, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the pot and mix gently with the rice and broth.
